FWIW, I have a GX8 and there is no 30-minute limit on recording, even 4K. Can't speak to the rest of your questions.

You will need to go in to the menu and turn off the information overlay, but I have a GX8 and tested this. It can be done. Can the GX8 stream without recording? The GX8 will provide a continuous video feed from its HDMI port when it is not recording. Is that what you mean by "stream"? In fact, the GX8's HDMI port goes dark when you record and is only active when you are not recording.I can't help you with your question about the Elgato HD60 X. I am unfamiliar with that product.

However, it remains unclear whether that limit also applies when you are simply streaming the video feed to a capture card.
